150 grams Jasmine Rice

260 grams Diced Chicken Thigh

15 grams Ginger Puree

30 grams Miso Paste

32 grams Hoisin Sauce

25 grams Ketjap Manis

5 grams Black Sesame Seeds

Step 1: Get Prepped

Start by halving, peeling, and thinly slicing the red onion. Then, peel and grate the garlic or use a garlic press for added convenience. Heat a large frying pan on high heat, and once hot, add the beef mince. Fry the mince until it turns brown, breaking it up with a spoon as it cooks. Once it’s cooked, drain and discard any excess fat. Remember to wash your hands and equipment thoroughly after handling raw mince.

Step 2: Fry the Beef

After the beef is browned, add the sliced onion to the pan and cook until softened, stirring occasionally. Next, stir in the grated garlic, tomato puree, Rogan Josh curry paste, and North Indian style spice mix. Combine everything well and cook for an additional minute to let the flavors meld.

Step 3: Rice Time

In a medium saucepan with a tight-fitting lid, pour the water required for cooking the basmati rice. Stir in the rice and a pinch of salt, then bring it to a boil. Once boiling, reduce the heat to medium, cover the saucepan with the lid, and let the rice cook for about 10 minutes. Afterward, remove the pan from the heat (while still covered) and let it sit for another 10 minutes, allowing the rice to continue cooking in its own steam.

As the rice cooks, stir in the water required for the sauce, red split lentils, and beef stock paste into the beef mince. Season the mixture with salt and pepper, bring it to a boil, and then reduce the heat to medium. Stir the mixture occasionally to avoid sticking, and add a splash of water if it gets too dry. After 10 minutes, remove the lid and continue simmering for another 10-15 minutes.

Step 5: Add the Spinach

Once the lentils are tender, add the baby spinach to the curry, one handful at a time, until it wilts and becomes piping hot. This process should take around 2-3 minutes. Stir in the mango chutney, adding a splash of water if needed to reach your desired consistency. Taste the curry and adjust the seasoning with salt and pepper, if required.
