To freeze these delightful recipes, one should fully assemble them up until the point of baking, and tightly cover your dish so you can freeze your dishes for up to three months.

Process them until they are creamy and then add your fresh basil leaves.
Afterwards, cook your noodles in a large pot of salted water and boil until they are al dente.

We at Dr. Cooker love enchiladas, especially these freezer-friendly vegetarian ones. Their sweet and spicy fillings are a mix of butternut squash, scallions, and black beans.
Filling Ingredients:
– Two teaspoons of extra-virgin olive oil
– Two cups of butternut squash
– 1/3 cup of chopped scallions
– One cup of cooked black beans
– Sea salt and freshly ground black pepper
Sauce:
– Two teaspoons of extra-virgin olive oil
– One can of tomato sauce
– One garlic clove
– Three tablespoons of chipotle sauce
– Sea salt and freshly ground black pepper
Enchilada Assembly:
– Six to eight tortillas
– Two cups of grated cheddar cheese
– One sliced jalapeno
Instructions:
1. Preheat the oven and line the baking sheet with parchment paper.
2. Make your filling by spreading the butternut squash cubes on the baking sheet. Drizzle your olive oil over it and add a pinch of salt and pepper, toss to combine. Roast until golden brown (roughly 25 minutes) then transfer your roasted squash to a bowl and stir in the scallions and black beans.
3. Then, make your sauce – in a medium skillet, heat the olive oil over medium heat and add the tomato sauce, garlic and adobo sauce and simmer for five minutes, stirring often.
4. In a 9×13 inch baking dish spread two tablespoons of tomato sauce on the bottom of the dish, assemble your tortillas with ½ a cup of filling, a tablespoon of sauce and a sprinkle of cheese – roll each tortilla and place seam side down in the baking dish.
5. Pour the remaining sauce over your enchiladas and sprinkle your remaining cheese over – bake for 20 minutes and then serve!
