Vegan Breakfast Muffins

Ingredients:
– 150g of light brown sugar
– 160g plain flour
– One tsp of baking powder
– 250ml of sweetened soy milk
– One peel and grated apple
– Two tbsp of grapeseed oil
– Three tbsp of almond butter
– Four tbsp of demerara sugar
– 50g of pecans
Instructions:
1. Heat your oven at 200C, 180C fan/ gas 6. Then, line your muffin tin with cases. Mix 100g of muesli with your light brown sugar, plain flour, and baking powder into a bowl.
2. Combine your milk, apple, and oil as well as two tbsp of almond butter into a jug, then stir them together into the dry mixture. Equally divide between the cases then mix your remaining muesli with the demerara sugar and remaining almond butter, pecans, and spoon over the muffins.
3. Bake for 25-30 minutes or until your muffins are golden and risen.

Ingredients:
– 150g of plain flour
– Two tsp of baking powder
– Three tbsp of golden caster sugar
– 400ml coconut milk
– Vegetable oil
– One or two thinly sliced bananas
– Two scooped-out passionfruit
Instructions:
1. Sift your flour and baking powder into a bowl and stir in your two tbsp of sugar and pinch of salt. Pour your coconut milk into a bowl, whisk the mix then measure out 300ml into a jug. Stir your milk slowly into your flour mixture to make a smooth batter.
2. Heat a shallow frying pan and brush it with oil. Use two tbsp of batter to make each pancake, either one or two at a time. Push four to five pieces of banana into each pancake and cook until bubbles pop on the surface and the edges start to look dry. Carefully cook each side of your pancakes and repeat until you run out of the mixture.
3. Meanwhile, place the remaining coconut milk and sugar into a small pan. Add a pinch of sale and simmer until your mixture has thickened. Use this as a sauce for your pancakes and drop some passionfruit seeds to add extra
